Hope everyone is enjoying this beautiful Independence Day. We’ll be heading out in a little bit for a BBQ at our friend’s house. I decided to bring a flag cake to the BBQ and had some help from my daughter.

The recipe made a lot of batter so we made two cakes. I think I’ll bring one to my neighbor if we don’t dig into first. Here’s the one my daughter decorated. Ok well not entirely, but she did a great job putting all the fruits on top.

Here’s the one I did. There are really supposed to be two rows of rasberries on each line but I think there is some kind of rasberry shortage going on in this town because I had a hard time finding some. And I almost got all the stars in there, I guess this flag represents the continental USA.

Today the first thing my son asked me was if I could bake him a cake today because he had a dream about cake. He’s so funny, I love that little guy so much! So right now while he’s out with his dad watching a movie I made him some cupcakes. Don’t they look delicious?! I have been good tonight and I’ve only eaten one, we’ll see how long that lasts.

The other day I was cleaning out one of my cabinets and rediscovered this beautiful dessert stand my mother in-law had given me hiding all the way in the back. This is a much nicer presentation than the regular ‘ol dinner plate I’ve been using.

Hope all the dads out there have a great day today! As for me I’m sitting here this late night/early morning waiting for some cupcakes to come out of the oven. Like always, instead of just baking my husband a simple cake I had to go and be all fancy and make these fun little burgers. I love Bakerella but sometimes I just wish she would stop making all these cute little creations that I can’t help try and imitate. But it’s really only a little wish because she’s so creative and I love seeing what she comes up with.
I also like giving my husband something made from the kids. This year I got this idea from a message board and I have it framed for the kids to give to him. Last year I bought some canvases and paint, then let them go at it for some abstract paintings that now hang in our room. Of course I don’t get anything handmade from the kids on Mother’s Day. I’ll just have to wait until they start school to get all those cute little presents since my husband is not crafty at all. He does take the kids out to pick out a present and card for me so I forgive him

I always feel weird saying happy memorial day since it’s really more of a somber holiday. In honor of Memorial Day we visited the Beirut Memorial here in Jacksonville.

This memorial is dedicated to the military members killed in the 1983 barracks bombing in Lebanon. You can read more about it here. When we arrived there was an older gentleman there and unfortunately I can’t remember his name, I have horrible memory. He was so sweet and was like our own little tour guide.

He told us the story of the Beirut bombings as well as how this memorial came about. It turns out his wife was a big advocate in the building of his memorial and he promised her he would always take care of it. So even though he’s not the groundskeeper he comes here and tidy ups the place. You could really see the loves he has for his wife and how very much he misses her.

They also had a little memorial for the victims of 9/11.


Thank you to all the military personnel who have given their lives for our freedom. And thank you to my husband who is truly my hero.

My little baby is getting so big! I took these pictures the other day to enter her in the Babytalk/GMA cover contest. I was out there for like ten minutes and I still wasn’t able to get a picture with good eye contact. I guess it didn’t help that I was trying to keep her in the little bit of shade in front of our house while trying to take them either. I still love these!

Today I got woken up to some yummy breakfast in bed made by my wonderful husband. Once the kiddos woke up I got some presents and these beautiful roses. Hope all the mommies are having a great day!

So the warm weather is here and the unofficial start of summer is just around the corner. Of course this means cookouts and potlucks so I want to share my favorite potato salad recipe. I’m usually not a big fan of potato salads but I really like this one. I know this has nothing to do with photography but I did take pictures of the process so it all ties in. :) So let’s get started.

Here are the ingredients you’ll need: 2 pounds new red potatoes, 6 eggs, 1 pound of bacon, 1 onion, 1 stalk of celery, mayonaisse, salt and pepper.

Start off by giving your potatoes a good rinse.

Chop your potatoes into bite size pieces.

Then bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes.

Once it’s done boiling drain and set in the refrigerator to cool.

While your potatoes are cooling place the eggs in a saucepan and cover with cold water. Bring the water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes.

While your eggs are cooking you can get started on the bacon. Cook over medium high heat until it’s nice and crispy. Drain, crumble and set aside.

So by now your eggs should be done so now you need to peel and chop them.

Now it’s time to take your potatoes. Add the bacon, eggs, onions and celery along with the mayonnaise, salt and pepper. Mix well and then chill for an hour before serving.

Here is the final product. I was on my way to a cookout so I used a ziplock container to put mine in, but it will look a lot nicer in a pretty bowl.
Here’s the recipe:
Red Skinned Potato Salad
Yields 12 servings
Ingredients
- 2 pounds clean, scrubbed new red potatoes
- 6 eggs
- 1 pound bacon
- 1 onion, finely chopped
- 1 stalk celery, finely chopped
- 2 cups mayonnaise
- salt and pepper to taste
DIRECTIONS
- Bring a large pot of salted water to a boil. Rinse potatoes and cut into bite size pieces. Add potatoes to water and cook until tender but still firm, about 15 minutes. Drain and set in the refrigerator to cool.
- Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- Add potatoes to a large bowl, along with the eggs, bacon, onion and celery. Add mayonnaise, salt and pepper to taste. Chill for an hour before serving.

Hope everyone is enjoying this beautiful Easter day. We’re enjoying our day relaxing and playing Mario Party on the Wii. Later on we’ll go out to dinner, I’m feeling like Cracker Barrel. I love their Sunday fried chicken special. Yesterday we went to the Pine Knoll Shores Aquarium were they had the cutest egg prop. Oh how I wish I could go back when there’s not so many people!

Besides photography I also enjoy baking and cooking, although not everyday. So last night we made these cute little cupcake bites after seeing the tutorial The Pioneer Woman wrote. Bakerella is the genious behind these adorable little creations as well as a bunch of other great stuff. If you’ve never visited these blogs you need to! My kids absolutely loved these and we can’t wait to try the cake pops next. Of course these are not as pretty as the originals since I made my cake balls too big and I put too much chocolate in my mold which made the chocolate overflow but I still think they came out cute.
